Recipe for a St. Patrick’s Day Feast: Irish Coffee

This is part one of four recipes for a St. Patrick’s Day feast. Keep an eye out for Beef in Guinness, Colcannon, and Soda Bread and a few extra written recipes.
The Irish Coffee is probably one of the most famous and popular of Irish drinks. It was created in the west of Ireland in the 1940’s by an Irish barman who wanted to greet the weary transatlantic travelers with a comforting drink while their Pan Am flight refueled.
The secret to a great Irish Coffee is using real, fresh cream and then floating it on top of the coffee. Make sure to add sugar to the coffee as this will help the cream float. Then sip the hot coffee through the cream.

Ingredients
• 1 cup freshly brewed coffee
• 1 tbsp brown sugar
• 2 oz Irish Whiskey
• 1 cup heavy cream, lightly whipped
Method
To warm the glass, pour hot water into a coffee glass, swirl around and empty.
Pour coffee into the glass and add brown sugar. Stir to dissolve the sugar and then add the whiskey.
Hold a spoon over the surface of the coffee and slowly pour the whipped cream over the back of the spoon and onto the surface of the coffee. The cream should float on top.
Drink immediately and enjoy!
